Feature Farmer — Littlest Acre Organic Farm

This week Littlest Acre Organics brings us organic Frisee lettuce and organic leeks. These are the perfect combo for that (hopefully) last bit of hail ridden weather when the sun shines but the sky freezes our fingers and we still crave our cozy flannels. Frisee is versatile in it’s nature, served either cold or warm.

This recipe is perfect for one of those busy nights when you get home late and want something quick and nutritious. It’s perfect on a bed of chopped frisee lettuce greens and tossed together. You can prep most of this in advance and reheat gently with a squeeze of lemon in the pan before tossing with fresh frisee and serving with fresh chopped parsley. It’s packed with vitamins and immune building produce.

Winter Salads

We’re still in that season, in our house we call it second winter, where we crave the early spring garden grown foods as the sun comes out to tease us and yet we’re still eating our winter stores. During this lull between the growing seasons we try to spice things up by eating a variety of winter salads, always boosted by a flavourful dressing.

All of these dressings would be delicious on your favourite Buddha bowls. They can also be used to roast your veggies and/or meat dishes.

My favourite winter salad typically includes warm quinoa, left over roasted veggies, winter greens, sunflower seeds and some grated carrots, radishes or other fresh root veg, topped with a flavourful dressing.
